Healesville may be known for its famous animal sanctuary, but this pretty town lined with trees is the heart of the wine district and is home to one of the pioneering ‘foodie’ families of the region, the Colaneri Family of Yarra Valley Pasta.

The Colaneri Family founded Yarra Valley Pasta over fifteen years ago.  A family of visionaries, they began with just a small semi – industrial pasta machine and a long list of traditional family recipes. With their team of loyal pasta makers, they have steadily pursued a simple philosophy: to make a unique high quality pasta product while ensuring they follow an artisan approach to their craft, based on the unique culinary traditions learned from their Italian ancestors.

Much attention is given to the all the ingredients that go into Yarra Valley Pasta, working closely with their suppliers to source the best quality.  Certified free-range eggs and a high quality GM – free durum wheat semolina, sourced directly from a farm in northern NSW, form the basis of all the pasta range; the filled ravioli changes seasonally and is made using ricotta cheese from 100% dairy farm milk from the nearby towns of Gruyere and Coldstream.

The company sells a selection of filled and fresh-cut pastas as well as gnocchi, lasagna, and a variety of homemade products.  Popular filled pastas include ravioli with local Yarra Valley grass fed beef; roasted pumpkin with sweet savoiardi biscuit & thyme; gorgonzola, prosciutto and fig, and cannelloni stuffed with ricotta and spinach.  Contemporary flavours include caramelised onion, goat’s cheese & almond; Australian prawn, macadamia nut and chilli.  For fresh-cut pasta, several varieties of angel hair, linguine, spaghetti, pappardelle and fettucine are made with flavours of cracked pepper, lemon and parsely, chilli and also  organic spelt.   Their most sought after product is the most simple and highly awarded –  Free-Range Egg Spaghettini – which won gold and overall Champion in the 100% Durum Wheat Fresh Pasta category at the 2011 Royal Sydney Show.

Pasta is made on a weekly basis.  To ensure freshness, the pasta is packaged using advanced refrigeration technology while filled pasta’s are snap frozen to capture the true flavours and freshness of the product without having to add any preservatives or colourings to enhance or extend shelf life.

Yarra Valley Pasta is a name and brand synonymous with the quality and reputation of the Yarra Valley and is available on restaurant menus and through retail food stores both locally and in Melbourne, coastal and country Victoria, New South Wales and Queensland.
